Exopolysaccharides(EPS) synthesized by lactic acid bacteria (LAB) represent one of the mostimportant natural additives in food industry due to the ability of LAB toproduce EPS in situ. Lactobacillus plantarum CIDCA 8327 strainisolated from kefir previously demonstrated to have high resistance to bilesalts, high survival after 1 hour pH 2.5, adhesion to intestinal cells andinhibitory activity against intestinal pathogens. Besides, this strain is alsoable to produce B2 vitamin and EPS. Thus, chemical chacterization of the EPS synthesizedby this strain is relevant to the possible application of this strain or its EPS into functional foods. Wedemonstrated that L. plantarum CIDCA 8327 produces 160 mg/L of an EPSwith a molecular mass of 104 Da, and consists of 80% of linearα-(1→4)-D-glucopyranosyl units, and 19% of the units are branched at positionsO-3 by single α-D-glucopyranosil units. These results contributes to thecharacterization of this potential probiotic strain.
