Resumen:
A high percentage of cancer cases is related to diet, particularly to lipids. There are evidences that the lipid intake is reflected in biological fluids like saliva or blood. That is why the fatty acid (FA) profile in saliva could be a risk indicator for salivary gland tumors. The main purpose of this study was to analyze the salivary FA profile and its correlation with dietary FA in salivary tumor-bearing patients. Thirty-eight patients of both sexes, 10 bearing benign and malignant salivary tumors (T) and twenty-eight apparently healthy (H) subjects who attended the Privado and Córdoba hospitals (Córdoba, Argentina), participated in the study carried out in 2006-2008. The FA intake was determined by a validated qualitative-quantitative food frequency questionnaire. The data referred to the FA habitual intake (mg/day) were quantified by the Interfood v.2 software. Patients obtained their saliva samples according to the international saliva collection methods. The lipid extraction was carried out by Folch method and after metylation the FA profile were determined by gas chromatograpy (mg/ml saliva) employing a capillary column. The non- parametric Wilcoxon test was applied to compare the FA concentration in saliva and diet of T and H (p 0
