Fish metabolism is influenced by temperature. Different studies have shown that fishmodulate the expression of enzymes involved in lipid metabolism in response to coldstress, increasing the levels of polyunsaturated fatty acids (LC-PUFA). Pacu, Piaractusmesopotamicus, is an important aquaculture species native to South America and itsgrowth and survival are affected by low temperatures. In this study we aim tounderstand the response to low temperatures in pacu. Toward this goal, we challengedsensitive and tolerant to low temperatures fish, to two temperatures: 23ºC and 10ºCduring 16 days. To assess the fatty acid profile, gas chromatography (GC/MS) analysiswas performed on muscle and liver samples. Differences between temperatures andtolerance groups were statistically analyzed. We found increases in LC-PUFAs at 10°C inliver: 45% for linoleic acid (LA; 18: 2n-6), 200% for α-linolênic acid (ALA; 18: 3n-3) and 62% for DHA (22:6n-3) (p
