Resumen:
Rosemary polyphenols were successfully incorporated in PVA electrospun mats. Release of polyphenols to several food simulants was studied and resulted different in each medium. Burst release occurred in lipophilic, while slow release resulted in hydrophilic and acid simulants. Higher amount of polyphenols were released to lipophilic medium.
