Modern society is affected by a pandemic of metabolic diseases related to lifestyles within an economic and social context. In this sense, a continuous development of preventive and effective strategies is necessary to attenuate non communicable chronic diseases to promote health. In recent years there is a tendency to incorporate natural products in diets, which in addition to their nutritional properties have physiological effects, offering numerous advantages to preserve and improve health. In addition to being components of the human diet, several roots and tubers have been shown to have beneficial properties to counteract obesity and its associated metabolic comorbidities. This work summarizes the anti-obesity properties of the main roots and their mechanisms of action evaluated in preclinical and clinical studies that provide a beneficial basis for the development of new anti-obesity products.
