Resumen:
Pediocin N5p produced by Pedicococcus pentosaceus N5p was studied with respect to its production in different media. Tomato juice broth was used as control and modifications in their components concentration showed that 30% more pediocin was produced in the medium by reducing the triptone level from 20 g.l-1 to 0.5 g.l-1. The addition of phosphate or acetate (50 mM) increased the bacteriocin production and organic acids at concentrations naturally present in wines had no effect. A simple and inexpensive medium containing triptone, yeast extract, Tween 80 and tomato juice is formulated to produce pediocin at high level.
