Resumen:
Edible films derived from starch have been proposed as packaging materials. However, they may undergo physicochemical changes during storage due to a variety of factors, such as ultraviolet radiation (UV), that result in an increase in their deterioration rate. In order to measure the degree of deterioration a fast, reliable, versatile and economical method is needed. We evaluated the effects of exposure to pulsed light (PL) on edible films made from cassava (Manihot esculenta C.) and taro (Colocasia esculenta L. Schott) starch, plasticized with glycerol.
