Resumen:
Limosilactobacillus fermentumLf2 and Bifidobacterium animalis INL1 are two potential probioticstrains which produce exopolysaccharides (EPS), molecules that may play animportant role in exerting health benefits. In the present work, stirredyogurts with these bacteria (added before or after fermentation) were made, andwith the purified EPS from Lf2 as well. The rheological properties, waterholding capacity, microstructure, metabolic activity, and production ofbioactive peptides (before and after in vitro digestion) were evaluated,together with the peptidase profile of each microorganism. This lastcharacterization clearly showed different patterns for each strain. In addition,the treatments that had the major impact on most parameters assessed were the ones in which the strains were co-cultured with the starters,especially Lf2.  In conclusion, bothEPS-producing microorganisms could provide yogurt with bioactive metabolites,having an impact on both rheological properties and microstructure.
