Resumen:
β-lactoglobulin (BLG) is the main protein in the lacteum serum. The aim of this work is the purification of BLG throughtout a simple, fast and economic method that can be applied at an industrial scale using polyelectrolytes (PE). Polyssacharides act as polyelectrolytes which have the capacity to coacervate proteins. The electrostatic interaction plays a key role, it depends on the pH conditions and salt concentration.In this work we study through Monte Carlo simulation the interactions BLG-polyanion and BLG-polycation as a funtion of pH.
