Raspeberries were harvested at 5 developmental stages from green to red ripe stage and changes in cell wall composition during development were analyzed. The results found suggest that cell wall disassembly in this fruit shows a similar pattern then that found in the case of boysenberry. No depolymerization of hemicelluloses was observed during development and the cell wall changes associated with softening in late ripening were a dramatic reduction in pectin polymer size and increased arabinose and pectin solubilization.
