Blueberries were harvested at 5 different developmental stages from green to blue ripe and the cell wall modifications associated with fruit softening were studied. The changes occurring during blueberry cell wall disassembly are quite different from the findings in the other berries studied in this project (boysenberries and raspberries) and also from other fruit models studied to date. At early stages of development the main changes include increased pectin and hemicelluloses solubilization but without high depolymerization and a late stage characterized mainly by an increased arabinose solubilization and downshift in hemicelluloses abut not pectin molecular size.
