Resumen:
During the last two decades, research activity dedicated to the development of nanostructured materials for food packaging applications has grown exponentially. In particular, nanostructures have been incorporated into biopolymer packaging materials to form bionanocomposite materials as eco-friendly alternatives to conventional packaging materials. This chapter provides a contemporary summary of cutting-edge developments in the field of nano-based food packaging technology with a special focus on active and intelligent food packaging. The current trends and researches of the diverse bionanocomposites, including inorganic and organic nanomaterials, and nanoencapsulation systems appropriate for active food packaging applications with advanced antimicrobial and antioxidant properties and oxygen/ethylene scavenging capability are described in detail. In addition, advances in the field of nano-based optical indicators, promising devices in the area of intelligent food packaging due to their unique optical properties, convenience, and ease of use, are also discussed.
