Food products prepared by people from the northwest of Argentina with ancient recipes are patay, añapa, aloja, arrope, bolonchao, among others. At home-made level, the available variety of recipes including algarroba flour has the amplitude of the creativity and customs of local people. The Institute of Popular Culture of Argentina (Instituto de Cultura Popular, INCUPO) assayed different products: candies with honey and algarroba flour, hot beverages with roasted flour like chocolate that replace coffee, and breadmaking products such as bread and cakes. Utilization of algarroba flour for gourmet dishes by recreation of ancient recipes.
