Resumen:
Encapsulation is a process to trap active components and release them under controlled conditions. In foods, antioxidants are added to minimize changes in flavor, aroma, color or nutritional value. Besides, antioxidants can protect the body against damages caused by free radicals and degenerative diseases. Phytochemical investigations on yerba mate (Ilex paraguariensis) reported many classes of antioxidants compounds. The objectives of this work were to characterize two different encapsulating systems, calcium-alginate beads with and without a chitosan layer, and to select an appropriate drying method to protect the active compound.
