Resumen:
Citrate stimulated the growth of Lactobacillus casei ATCC 7469, L. casei CRL 74 and L. plantarum CRL 105 in complex media in the absence of fermentable carbohydrate. L. casei CRL 75 and CRL 200 utilized citrate only in the presence of glucose producing under these conditions stimulation or inhibition of growth according of the strain. In all cases citrate utilization increased to final pH. L. casei ATCC 7469 and L. plantarum CRL 105 produced diacetyl and acetoin from citrate
