In batch cultures Lactobacillus rhamnosus ATCC 7469 fermented citrate into 2 mol of acetate, 1.2 mol CO sub(2), 0.19 mol of L-lactate and a small amount of diacetyl, acetion and 2,3 butanediol (DAB). Higher levels of DAB were formed in absence of glucose. In presence of this sugar, citrate was fermented into 1 mol of acetate, 1 mol of L-lactate and 1 mol of CO sub(2). L. rhamnosus ATCC 7469 exhibited citrate lyase, acetate kinase, acetolactate synthase and diacetyl/acetoin reductase activities. Citrate lyase was induced by citrate while its synthesis was repressed by glucose. Diacetyl reductase and acetoin reductase were repressed by citrate which led to the accumulation of diacetyl and acetoin.
