Resumen:
A soluble polycationic agent (Disperfloc C-500) was used for whey clarification. Turbidity was decreased by more than 90% with the addition of only 0.8 g/l df the agent, at pHs ranging from 7.3 and 7.6 and with a temperature step of 5 min at 50? C. The calcium and phosphate content of whey was decreased by more than 50% while 98% of the total protein content still remained soluble.
