Resumen:
Although Argentina is not a major quinoa producerin the Andean region, quinoa crops have been presentin the country for millenia. Archaeological evidencesuggests quinoa was grown by hunter-gatherersin the Altiplano, in the province of Catamarca.Traces of seeds and stems of varying degrees of domesticationhave been found in various sites in theprovinces of Salta, Catamarca, Tucumán, San Juanand Mendoza, and it is known that quinoa was oncegrown in the lowland provinces of Santa Fé and Córdoba.Today, however, quinoa is only found in theAndean region in northwest Argentina (NWA), andin part of the Andean Patagonia, in the provincesof Neuquén and Chubut. The recent interest in quinoais twofold: commercial, given its current profitability,and cultural, as part of the effort to preservethe cultural heritage of the indigenous peoples inNWA and Patagonia. This interest has given rise toseveral projects focused on commercial productionand crop preservation; projects in some communitiesare linked to the culinary demands of tourists
