Resumen:
Ilex paraguariensis St. Hil. (yerba mate) is one of the most used species in South America due to its nutritional and medicinal properties (tonic, choleretic, diuretic, antirheumatic, etc). The industrial process involves different stages which could modify the qualitative and quantitative composition and the pharmacological activities. In this work it was studied by HPLC the main compounds (methylxantine, caffeoyl derivatives and flavonoids) of the same lot of Ilex paraguariensis during it’s industrial process stages in order to bring results which allow the improvement of the biological active principles content. The chromatographic profile of each one of the samples analyzed separately showed a similar quali-quantitative pattern by HPLC. Extraction of the bioactive compounds increased after processing. The “zapecado”, drying and forced seasoning, showed the highest content in biological active principles and the quantitative differences between samples were not significant
