Abstract: Pre and post gelatinization rheology of native and acetylated potato starch was measured. The starch was acetylated at the laboratory. Acetylating of starch granules was confirmed by means of Infrared Spectroscopy. Gelatinization was studied by means of optical microscopy and viscosity measurements. Finally, gelatinized starch rheology results were fitted using a power law model and compared with the previous results obtained from literature. The change in the amylose content was determined, as well as the crystallinity before and after chemical modification.
