Resumen:
Edible films for packaging applications, made from sodium caseinate and/or chitosan, using glycerol as plasticizer, were prepared by casting from aqueous solutions. The mechanical properties (yield strenght, elastic modulus, tensile strength) were determined and related to the composition of the film, the plasticizer concentration and the humidity content of the samples.. Puncture impact properties (maximum strength and energy at crack initiation) were determined to confirm previous results.
