ABSTRACT: A proposal of using phase change materials as temperature moderator to control the respiration tax of agricultural products is presented here. These substances can maintain the products inside the limits required for their conservation. To do that, the phase change materials must be convenient packed. It is analyzed the cases where the phase keep is proposed, too. The phase change material must be initially at temperature less or equal to the melting point and it is analyzed their capacity to absorb heat and, at the same time, to maintain the agricultural product inside the necessary thermal conditions for their good conservation state.   Keywords: agricultural products, respiration tax, phase change materials, Stefan problem, heat flux.
