Increasing global population and the need to enhance human and environmental health will require changes in human diets and an agricultural transformation (Rockström, 2017; Springmann et al, 2018). Therefore, it is essential to analyze the different perspectives that are being discussed today regarding consumption patterns transformations that may lead to changes in the way of doing agriculture. Transforming human diets could be the first, if not the main, step to guarantee socially and environmentally healthier food production systems from local to planetary scales.The objective of our research was to identify the factors that determines the possibilities and barriers for transforming local human diets that may contribute with a reorganization of food production systems.Methodologically, four ´transformation laboratories´, as processes used as spaces for dialogue and practice about transforming diets, were carried out. These T-Labs involved, in this first stage, low income consumers to evaluate the extent of their interests and constraints for changing diets, and were held in southern Córdoba, Argentina.Results have been organized into three component parts: 1) food consumers appreciations on their diet impacts on human and environmental health; 2) needs and opportunities for diversifying diets; and, 3) constraints to behavioral change.
