The understandingof biochemical aspects connected with fruit quality andfirmness in particular, is crucial to improve marketable conditions.The purpose of this work is to explore proteome andmetabolome changes in two highbush blueberry cultivarsduring development and their association with contrastingquality features. Emerald is a variety with a large, goodtaste and firm fruit, while O?Neal is soft, medium sized andvery sweet. Proteome analysis, allowed the observation that,at fruit set, processes related with the response to inorganiccompounds and small molecule metabolisms are relevantin both varieties, with enhanced organic acid metabolismin Emerald. In ripe fruit, the firmer variety showed an enrichmentof proteins associated with TCA, nitrogen and smallmolecules metabolic processes, while thioester metabolismwas enhanced in the soft variety. The observed variation inmetabolite levels gave strong support to the precedent results.This study suggests that changes in some key biologicalprocesses during maturation of blueberries are behindtheir distinct quality. These findings may yield clues for improvementsin fertilization practices, as well as to serve tothe guided development of new varieties based on biochemicalquality.
