Resumen:
The aim of this study was to determine dietary effects on meat quality displayed under retailconditions. Sixty Angus steers were assigned to six dietary treatments, defined by differentstimes on grazing and feed on a high concéntrate diet (P0-C49; P0-C98; P49-C49; P49-C98; P98-C49; P98-C98). 24 h post mortem m. Longissimus samples were collected. Meat samples wereoverwrapped with polyvinyl film and displayed under light at 2˚C to simulated retail conditions;3 level of areibic exposure (AE) were defined (0, 4 and 8 days). TBARs values increased with AE;beef from P0-C49; P49-C49; P98-C49; P98-C98 treatments had de lowest TBARs (p<0,005),meanwhile P49-C98 y P0-C98 had the highest. Water holding capacity (WHC) increased with AE(p< 0,01); dietary treatment P98-C98 had de highest WHC. Negative correlations betweenTBARS vs pH and pH vs % fat content were observed (r= -0,25; p= 0,006 y r= -0,27; p= 0,002,respectively).
