Reología de dispersiones acuosas de la goma exudada de Prosopis alba en comparación con goma arábiga.

The objective of this work was to study the rheological properties of Prosopis alba exudate gum (GAL), a non conventional gum from northeast of Argentina. The studies were performed at diluted, medium and high concentrations, in order to reach a better understanding of the global rheological behavior and to predict its functionality in comparison with arabic gum (GA). Both gums showed similar rheological properties and slight differences which could be explained in terms of structural particularities. Based on analyzed rheological properties, GAL could be used in similar applications than GA.
