Resumen:
The diffusion coefficients of water and solutes are important parameters in the analysis, desing and optimisation of the osmotic dehydration process. In the present report the method of linear solutions of Fick´s Law was used to estimate the diffusion coefficients of water and sucrose during the osmotic dehydration of slices of pineapple fruit. In addition, it was analysed the effect of considering the change in thickness during the process, and the use of higher order terms in the analytical solutions.
