Resumen:
Improving extraction of intracellular compounds through the modification of the permeability of the cytoplasmic membrane by electroporation caused by pulsed electric fields is presented. PEF technology has been used to assist the extraction of valuable compounds located in both microbial cells and plant-based matrices. PEF can be successfully used for increasing extraction yield, reducing processing time or reducing extraction temperature. Application of PEF for extraction of pigments, expression enhancement of juices, oil extraction, winemaking, sugar production and revalorization of by-products are described.
