Resumen:
Polyamines (PAs) participate in the defense reaction against severalenvironmental conditions that causes oxidative stress. Solar radiation stress iscommon in many fruit-growing regions of the world and produces an applephysiological disorder called sunburn which causes severe crop loss every year. Theaim of this work was to study PAs role in sunburn apples skin in North Patagonia. ?RedDelicious? apples maturity indices were determined at harvest time in healthy (HS) andslight sunburn side (SS) of the fruit. Skin tissues from both sides were evaluated interms of, lipid peroxidation (thiobarbituric acid-reactive substances, TBARs),antioxidant activity (DPPH radical-scavenging), and free PAs content. Flesh firmnesswas higher in SS than HS and no differences were found in soluble solid, starch indexand tritatable acidity. Lipid peroxidation was higher in SS (80.8 nmol g-1 FW) than in HS(53.1 nmol g-1 FW). DPPH was 113% higher (p
