The inhibitory effect of bacteriophage against lactic acid starters is still recognized as one of the major and persistent troubles in dairy fermentations.This article reviews the basic biological aspects of the bacteriophage life cycle. The most recent classification of viruses according to the International Committee on Taxonomy of Viruses and, in particular, the classification of phages of lactic acid bacteria is also discussed. Native-phage resistance mechanisms are described, including clustered regularly interspaced short palindromic repeats, the latest defense mechanism revealed in prokaryotes. Finally, different methodologies to detect bacteriophage in dairy plants are discussed.
