Mutantes espontáneos fagorresistentes de Lactobacillus delbrueckii subsp. bulgaricus para aplicaciones industriales

Se aislaron y caracterizaron 44 mutantes espontáneos fagorresistentes a partir de 3 cepas comerciales de Lactobacillus delbrueckii subsp. bulgaricus (identificadas Ab1, YSD V e Ib3), utilizando sus fagos líticos (fYAB, fBYM y fIb3). Luego de ser confirmada y caracterizada la fagorresistencia de las variantes, se determinaron sus propiedades tecnológicas (cinéticas de acidificación, actividades proteolítica y acidificante). La actividad acidificante permitió clasificarlas en variantes “lentas” y “rápidas”. Las variantes “rápidas” mostraron mayor actividad proteolítica y velocidad de acidificación. Este trabajo reveló que es posible aislar mutantes espontáneos fagorresistentes a partir de cepas sensibles de Lb. delbrueckii subsp. bulgaricus, que mantengan las propiedades tecnológicas originales. Abstract A total of 44 spontaneous phage-resistant mutants were isolated from 3 commercial strains of Lactobacillus delbrueckii subsp. bulgaricus (identified Ab1, YSD V and Ib3) by using their lytic phages (fYAB, fBYM and fIb3). Once the phage-resistant phenotype was confirmed and characterized, technological properties of the variants were determined (acidifying kinetics, proteolytic and acidifying activities). Acidifying activities rates allowed to classify them in “slow” and “fast” variants. “Fast” mutants showed higher proteolytic activities and faster acidifying kinetics than the “slow” ones. This work demonstrated that it is possible to isolate phage-resistant mutants from sensitive strains of Lb. delbrueckii  subsp. bulgaricus that could be used in the dairy industry.
