Durumwheat (Triticumdurum Desf.) cultivars can differ significantly in semolina wet gluten contents (WGC) even at similar protein levels (PROT), revealing the existence of genotypic differences in their gluten forming capacity (GFC). This fact can give rise to controversy during semolina trading, and remains underinvestigatedfor the set of cultivars grown in Argentina.
