Uruguay is one of the main beef exporters and has one of the highest indexes of internal consumption. The production system is based on native pastures, each animal has an estimated area of pastures of 15000 m2. Meat has an important role in human diet providing essential nutrients. Beef is a selenium (Se) source in the diet and this nutrient level depends on the food received by livestock.The aim of the work was the development of an analytical method for selenium determination in beef and livestock feed by HG-MIP OES.Selenium levels in the analyzed samples were 0.10 to 0.45 mg kg-1 for beef (dry basis) and from 0.11 to 0.18 mg kg-1 for pastures and forages (dry basis). Selenium content remain practically unchanged in cooked meat, so its nutritional value is maintained after cooking.In pastures and forages the content of Se is above that referenced in bibliography for Uruguay.The analytical method developed was successfully applied to beef and vegetable samples using a common sample preparation procedure and an economical technique such as MIP OES achieving very low detection limits for Se determination by coupling hydride generation.
