L-lactic acid production using the syrup obtained in biorefinery of carrot discards

In the last years, the use and valorization of waste or by-products of diverse agricultural and industrial practices has been a topic of great interest in the scientific community. The accumulation of this type of waste in large quantities results not only in a deterioration of the environment but also in a loss of materials which can be processed to generate value-added products. A big amount of carrot discards is produced in the word by packing companies every year, about 30% of the harvest, because they do not meet the quality standards and the requirements of size and shape imposed by the consumer market. The aim of this work was to evaluate the feasibility of using carrot discards to produce lactic acid employing two strain of genus Rhizopus. The use of carrot discards does not report in the bibliography as substrate of lactic acid production. -carotene present in carrot was extracted with ethanol and the syrup obtained was used as substrate for lactic fermentation. The maximum concentration of lactic acid (22.18 g/L) was achieved using the strain of Rhizopus arrhizus (106 conidia/mL) after 3 days of fermentation and syrup supplemented with (NH4)2SO4, CaCO3, and other salts. Uniforms pellets were obtained adding CaCO3 12 h after the fermentation started.
