Functional foods have beneficial effects on human health and can reduce the risk of various diseases. Some bioactive compounds that are present in functional foods modulate inflammatory responses; others display antihypertensive, antioxidant, anticancer, antimicrobial and anticariogenic properties, among others. Recently, there has been notable growth in interest by both consumers and researchers towards ancient Latin American crops, such as chia, amaranth, quinoa, Andean lupin and sacha inchi (Plukenetia volubilis). This region of the world also boasts a large variety of native fruits, such as goldenberry and lucuma, which have health-promoting compounds. The present book deals with recent research related to the potential use of these native crops as sources of bioactive compounds (proteins, hydrolysates, peptides, antioxidants, essential lipids, dietary fiber, pre- and probiotics) and as ingredients in functional foods.
