Abstract No. 0063Title Drinking in the Andes: organic residue analyses of Inca ar¨ªbalo jars from C atamarca,Argentina.AbstractFestive events were part of the Inca domination strategy and fermented drinks were salientelements of the liturgy. Hospitality banquets were the setting for negotiations with annexedpopulations, who had an active participation in the production of beverages.We studied organic residues from nine ceramic jars (ar¨ªbalos) to explore their use ascontainers for beverages. Samples came from Inca sites in C atamarca, Argentina (SanFrancisco, Las C oladas, Fuerte Quemado Intihuatana). We recovered lipid, carbohydrate andprotein residues from the ceramic matrixes. We also studied native maize, mesquite andllama for comparative purposes. Samples were studied by GC -MS, EA-IRMS, HPLC -ESI andMALDI-TOF-MS.Results from GC -MS indicated mixtures of plant and animal lipids. Plant residues result fromstorage of fermented drinks. Animal fats were possibly used to seal inner surfaces to holdliquids. Biomarkers for ruminant animals suggest South American camelids as probablesources. Jars show no signs of sooting from cooking. Isotopic analyses indicated somear¨ªbalos with¦Ä1 3C values similar to aloja, a local beer made from mesquite (C 3 plant). Otherar¨ªbalo exhibited ¦Ä1 3C values similar to chicha made form maize (C 4 plant). Initial results fromHPLC -ESI showed that lipids were partially found as intact triacylglycerides, indicatingexceptional preservation. Acylglyceride characterization is being currently carried out to findbiomarkers for native plants and animals. Results from MALDI-TOF-MS of carbohydrates wereconsistent with oligosaccharides from black mesquite. Optimization of peptide extraction iscurrently in process.This evidence indicates that both chicha and aloja were integrated into the politicalcommensalism sponsored by the Incas.
