Hydroquinone-β-rutinoside was synthesized by transglucosylation in an aqueous system with α-rhamnosyl-β-glucosidase from the fungus Acremonium sp DSM24697 and hesperidin as rutinose donor. Only one phenolic group was glycosylated and the nature of the reaction products was governed by the concentration of hydroquinone and the enzyme. The optimal conditions for synthesis of the rutinoside were 30 mM hydroquinone and 1.8 mM hesperidin in 50mM sodium citrate buffer at pH 5.0 and 30 °C for 2 h. Under these conditions hydroquinone-glycoside was obtained with a total molar yield of 38% with respect to hydroquinone and a total glycoside concentration of 0.7 mM in the reaction mixture.
