Resumen:
Since starch undergoes phase transitions during its thermal processing, it is important to understand the transformations of this polysaccharide during processing. Usually, starch processing is carried out applying shear fields, which lead the biopolymer phase transition by disrupting the multilevel structure of its granules [1]. The incorporation of components with plasticizing capability during starch thermal processing allows obtaining a thermoplastic polymer, named thermoplastic starch (TPS). Conventional starch plasticizers are water and polyols. Along with promoting plasticization, the addition of polyols like glycerol improves the final properties of starch based materials.
