Resumen:
Silage process allows the recovery of nutrients contained in fish waste and can be recycled as animal feed. Biological silages usually include the incorporation of an extra carbohydrate source to allow microbial development. Fish residue waste stored at -18°C accounted for coliforms: 1.9 x101 CFU/g, molds and yeasts 11.6 x10 1 CFU/g, Salmonella spp. absence in 25 g. The pH decreased and inhibited the development of total coliforms, Salmonella spp., molds and yeast.
