Resumen:
Based on the importance of multivariate methods to evaluate traceability in foods, this chapter provides awareness of the increasing applications of two and three way methodologies and their advantages in the classification context. First, an explanation on data structure properties recorded from different analytical platform with multivariate detection is performed. Then, the most explored models and algorithms for fingerprinting classification are briefly detailed, joined to relevant works applying these techniques, focusing on classification results and their potential uses.
