Maqui spray dried powder rich in antioxidants suitable for direct compression

Resumen:
The goal of this work was to evaluate the feasibility of producing Maqui-Berry powder by spray drying the fruit aqueous extract. The effect of using different drying adjuvants on the powder flow properties, process yield and antioxidants bioactive compounds content was analyzed. Maqui Berry extract with total solid content (SC) of 9.6 ± 0.1ºBrix was mixed with different carriers. The following formulations were spray dried: colloidal silicon dioxide:SC 0.5:1; gum Arabic:SC 1:1; maltodextrin:SC 1:1; maltodextrin:micro-crystalline cellulose:SC 0.67:0.33:1; and gum Arabic:micro-crystalline cellulose:SC 0.67:0.33:1. Each sample was spray dried in a Mini Spray Dryer Büchi B-290 at the following operating conditions, drying air inlet temperature:130º C, atomization air volumetric flow rate: 400 l/h, feed volumetric flow rate: 1 ml/min , and drying air volumetric flow rate: 35-38 m3/h. The quantitative determination of the bioactive components was assayed by spectrophotometry. The process yield (PY) was determined. Two flow powder indicators, the angle of repose (α) and Carr´s Index (CI), as well as the product moisture content (MC) were evaluated. The powder obtained by employing colloidal silicon dioxide as carrier presented the best features: excellent flowability (α: 30.4 ± 0.7 o, CI: 8.0 ± 1.7 % ), an acceptable MC value of 4.9 ± 0.3 %, high PY (70%), and the highest concentration of anthocyanins (1528 ± 41 mg cy-3glu/100g of powder) and polyphenols (3936 ± 132 mg GAE/100g of powder). The performed study indicated that the spray drying technology is adequate to process Maqui Berry aqueous extracts, being the colloidal silicon dioxide the best drying adjuvant. This formulation would be useful to produce tablets with antioxidant properties as final product. Further work involves the use of a statistical design to find the optimal set of spray drying operating conditions, as well as the optimal relationship SC: colloidal silicon dioxide to obtain an enhanced product.
