The effect of vacuum glucose infusion to reach water activity » 0.97 on the  structure of mango and apple parenchymatous tissue was studied. The changes were also compared with those caused by atmospheric glucose impregnation and/or blanching treatment. Apple and mango showed different structural behaviour and no general trends could be stated regarding the pressure of the impregnation treatment and/or the influence of the heat treatment.
