b-Galactosidase from Kluyveromices fragilis was immobilized on chitosan beads. A tubular reactor was filled with this carrier and used for lactose hydrolysis in sweet whey and pH 6.86 buffer solution. A reactor mathematical model was developed using previous work and deactivation equation for catalyst half-life and working time estimation. Calculated values were 80 and 32 hours for the half-life and 158 and 68 hours for the working time with lactose in buffer solution and reconstitute whey respectively. The results show a less efficiency of lactose hydrolysis with whey which could be due the protein content in the solution for this case.
