Antioxidant properties of mushrooms: Gymnopilus pampeanus: a ?new? edible fungi with antioxidant properties

Mushrooms are considered as healthy food since they are lowin calories, fats and essential fatty acids, and high in proteins, vitamins andminerals. It has been reported that oxidative damage caused by free radicalsmay be related to aging and diseases such as atherosclerosis, cancer, andrheumatoid arthritis. Among the biologically active substances that are presentin mushrooms, phenolic compounds have attracted much attention due to theirproperties as antioxidant, anti-inflammatory and anti-tumor agents. Phenols arehydroxylated aromatic compounds that include a large number of subclasses, suchas flavonoids, phenolic acids, including hydroxybenzoic acids andhydroxycinnamic acids, stilbenes, lignans, tannins, and oxidised polyphenols,displaying a great diversity of structures. Gymnopiluspampeanus (GP) is a mushroom consumed in Argentina and Uruguay with alarge pileus (10?20 cm diam.) that often produces clusters with manybasidiomata. During the past years, we have been collecting strains to testthem in culture. Recently, we determined the optimal conditions needed tocultivate this edible mushroom. We found that light was necessary for a normaldevelopment of primordia; the highest biological efficiency was obtained on Populus sawdust reaching a mean of70.67%. We used 12 strains of GP to evaluate total phenol content,flavonoids content, scavenging activity of 1, 1 difenil-2-picrihidrazil (DPPH)free radicals, total antioxidant activity. Specimens obtained in culture were dried.Crude extracts were obtained from samples in methanol-waterto evaluate the antioxidant properties. Results showed that the strain with higher value of total phenolcontent was ICFC 754/12 with 6 mg GAE/g. Highest value of flavonoidswith 20 mg of quercetin/g was obtainedwith strain ICFC 779/13. StrainsICFC 47/99 and 751/12 obtained the highest value of scavenging activity of DPPHfree radicals with 0.95 and 0.90 mg of EQ/g respectively. The highest values oftotal antioxidant activity in mg of acid ascorbic equivalents were obtainedwith strains 47/99 and 776/13 reaching 12 and 11.5 AAE-/g respectively. Wefound important differences regarding their antioxidant capacity. Consequently,strain selection in GP is an important step before producing a dietarysupplement or any drug. The results here obtained indicate that GP presents anatural source of metabolites with possible uses due to their antioxidantactivity.
