The control of Listeria monocytogenes biofilm formation on industrial materials at 10 ºC by using the bacteriocinogenic Lactobacillus sakei CRL1862 was investigated. Based on superficial characteristics L. monocytogenes FBUNT was selected for its use as biofilm producer on stainless steel (SS) and polytetrafluoretylene (PTFE) surfaces. Three conditions were simulated to evaluate the ability of L. sakei CRL1862 and its bacteriocin (curvacin A) to displace, exclude and compete pathogen biofilm formation. All assayed strategies could be possible inhibitory mechanisms for L. monocytogenes biofilm formation; however, a greater decrease of pathogen sessile cells was observed during exclusion and competition (co-culture). The efficacy of pathogen inhibition was higher on PTFE surface than on SS. The use of the bacteriocin and/or the bacteriocin-producer would represent a realistic approach as pre-treatment of industrial surfaces. The biocontrol of L. monocytogenes could be a safe and environmentally friendly sanitation method to mitigate post-processing food contamination.
