Resumen:
Excessive fat intake is associated with increase of cardiovas-cular risk factors. Data from the literature indicate that highcarbohydrate or fat diet increases body weight (BW), fastingglucose, insulin levels and induces glucose intolerance (GI).In previous work we demonstrate that diet supplementedwith 10% chia oil has beneficial effects on vascular functionin spite of inducing GI. The objective of this work was toanalyze the effect of reducing % of chia oil in endothelialfunction, biochemical and hemodynamic parameters. Rab-bits were fed either a control diet (CD), CD enriched with3% chía oil (CD-Ch3%), or a CD enriched with 10% chia oil(CD-Ch10%) for 6 weeks. Blood pressure (BP), heart rate(HR), glucose tolerance, total cholesterol (CT), HDL, LDL,and triglycerides (TG) parameters were determined. Theendothelial function was evaluated in aortic rings contractedwith phenylephrine (Phe) 5.10 -6 M and exposed to acetyl-choline (Ach, 10 -8 M to 5.10 -6 M).
