The biological effects of flavonoids can be explained by their interactions with proteins targets; however there is scarce information about the interactions between anthocyanins and proteins. The main goal of this work was to evaluate the anthocyanin/albumin interactions by spectra absorption and their effects on the antioxidant activity. It can be concluded that the anthocyanins could be bind to albumin, although their antioxidant activity was not mask when it is compared with quercetin. Probably, glycosilation of anthocyanidins lowers its affinity to albumin and the OH groups are more availability to exert their antioxidant activity.
