Resumen:
The aim of this study was to examine whether relationships between dielectric anisotropy and sensory measures of three bovine meat cuts. Nine trained panelists and Solartron 1260 was used to establish a connection between these measurements. Measurements of dielectric properties of  muscle carried out in each of two orthogonal directions (longitudinal and transverse) between 1 Hz and 8 MHz shows two anisotropy windows. Both anisotropy windows had a similar behavior compared with toughness scores and dissimilar with another panel scores. In the experiments, we found a higher correlation between toughness at all muscles and LBR range (r2=0.981) compared with MBR (r2=0.594). The maximum ratio of LBR represents a good measurement to determine the toughness  of animal muscles.
