Resumen:
Apparent consistency of gelatine and subjective viscosity of silicone were studied by two psychophysical procedures: magnitude estimation and cross-modality matching.A psychophysical function related apparent consistency in the mouth to objective measurement of consistency (in Bloom).  Other psychophysical function related subjective viscosity to objective viscosity (in centipoises).  An equal sensation function  relating objective consistency with objective viscosity was obtained by cross-modality matching procedure.The results of both methods show a specific agreement and they suggest that the rate of growth in perceived intensity with consistency is qualitatively similar to the scaling of subjective viscosity.These functions ajust to Stevens´law and the exponents were 0.6 for consistency and 0.3 for viscosity.  The exponents of both functions show that these perceptual systems contract the physical range, so that a 3-fold change in objective consistency produces a 2-fold change in apparent consistency, but a 6-fold change in physical viscosity is perceived only as a 2-fold change.
