Resumen:
This study evaluated the food safety risk associated with the consumption of sábalo from the lower Salado River basin (Santa Fe, Argentina), which is highly impacted by agroindus-trial activities. High concentrations of insecticides, herbicides, and fungicide were reported in fish sold at artisanal fish markets, some considered among the highest in the world. Based on these data, the food safety risk coefficient was calculated for the general and vulnerable populations (riverside residents and fishermen), and for the suggested frequency of con-sumption (FCS). The risk obtained was higher for the vulnerable population and even higher for the FCS. The risk scenario for human health is aggravated by the carcinogenic potential of some compounds. Considering the state of national regulation and the implications of the pesticides detected, it is important to review current public policies and apply the precautio-nary principle in environmental and health management in the territory.
